I am writing today because I wish to do an unpaid internship in your reputable company as a part of my apprenticeship (“compagnonnage”) in pastry-chocolate.
I did my first apprenticeship at “La Brioche d’Or” in Ittre (Belgium) with chef Philippe Rhéau MOF (Un des Meilleur Ouvrier de France Glacier 2000 – “One of the Best Craftsmen in France” Ice creams, year 2000) from September 2015 to April 2016.
I did my second apprenticeship at “Sébastien Bouillet, Relais dessert” in Lyon (France) from June 2016 to December 2016.
I did my third apprenticeship at “Pascal Dupuy, Relais dessert” in Oslo (Norway) from March 2017 to August 2017.
I graduated from Hospitality School “Ecole Hôtelière Provinciale de Namur” in Belgium in June 2013 - I have a passion for pastry and chocolate.
I then spent one year abroad in Toronto, Canada to improve my English and in Thailand to work on volunteer projects.
I came back to Belgium and took a 1-year training course in Chocolate-Confectionery-Ice Cream at CERIA (Brussels), followed by my apprenticeship (“compagnonnage”).
The principle of the “compagnonnage Belgian Method” is to do four apprenticeships of six months in renowned institutions. The goal is to learn on the field with a practical experience and to be overseen by a reputable craftsman.
I will not be paid, but will receive accommodation and meals free of charge when possible.
